– 2 tbsp of olive oil
– salt and pepper
– juice of half a lemon or about 1.5 tbsp
– baguette, sliced and toasted into crostini
-chopped parsley for garnish (optionally available, can use extra thyme as effectively)


In a blender, mix the tofu, dietary yeast, non-dairy milk, and lemon juice till it’s clean and pureed. (if it is too runny, you’ll be able to add extra tofu and mix, if it is too thick, add extra milk. You need it to be like a semi-thick sauce.)

Clear the mushrooms in line with their kind, and chop roughly.
